Herb Crusted Roast Beef with Horseradish Cream

This one I haven’t had to alter very much at all!  Shout out to Food Network – Sunny Anderson 2008!  Fits on the Dukan Diet, any day of the week. If you have butchered your own pismo, this recipe is a good idea for what to do with that petite roast.  Tasty with or without the horseradish, easy and dare I say?  Healthy?  I did. I did dare and there it is.  I used to think parsley was for garnish only and not that awesome, I now think differently.  Not only is parsley chock full of vitamin K, A and C (which help the immune system and bolster cardiovascular health), it has components that act as anti-inflammatory agents and anti oxidants!

Messy Ingredients:  

  • 1 boneless beef eye round roast, or petite roast.  *the amount of beef doesn’t matter unless you’re doubling the beef
  • 2 TBS vegetable oil and 1/2 cup more for paste(I used 1/4 cup)
  • 5 cloves garlic
  •  1 bunch parsley ,leaves only
  • 1/2 bunch fresh thyme, leaves only
  • 2 sprigs fresh rosemary, leaves only
  • 8 sprigs fresh oregano (or 1/2 TBS dried)
  • 2 TBS mustard powder
  • salt and pepper to taste
  • ____________________
  • Horseradish cream:
  • 1/2 cup fat-free sour cream
  • 2 TBS horseradish – prepared (prepared as in ground, not creamy)
  • 1 TBS lemon juice

For the horseradish, just mix it all together and refrigerate until ready.   You can add more horseradish if you’d like more zing or more sour cream if you’d like less!  Preheat the oven to 350°F. In an oven-proof pan, heat the 2 TBS oil.  Season the beef with the salt and pepper and then brown in the pan on the stove.  Sear over medium-high heat on each side until nicely browned, about 8-10 minutes total.  Place roast on a rack or cookie-sheet to cool while you make up the paste.  For the paste, place the garlic, herbs, mustard powder, 1/4 cup oil, salt and pepper to taste in a food processor and pulse until everything is pasty.  Smear all over the beef roast and then put in the oven.  Bake until internal temp is 125°F (for less than 3 lbs) or about 45 minutes.  This will make for a medium-rare roast so if you like your meat more done, you know what to do!  Let roast rest 10 minutes or so before slicing.  Serve with the horseradish cream.  100% Dukan Worthy on all stages, simple and flavorful!   We made a repeat of this dish, once with the petite roast and once with an eye-roast bought specifically for this meal.  Unfortunately, I never got a picture of it with the horseradish sauce since it all was sliced up and portioned out for workday lunches.  Trust me though, it was tasty!
