Quite possibly, my one hot mess has proven contagious, at least in our home!  Daniel has been working up a few dishes in the kitchen lately, researching and tweaking old favorite recipes and new ones too.  I thought I’d add his holiday candy recipes here before the holiday passes us by and we get back into our Dukan Diet lifestyle.  I had never had a “buckeye” before and well, couldn’t keep my fingers off.  They are called buckeyes because once the chocolate is dried, a spot of peanut butter is usually left uncovered making the ball look like the nut. Daniel got these recipes from his Mom, and made little changes to them, these sweets Daniel enjoyed growing up and decided to bring back to the table this Christmas. Let’s get to it!

Messy Ingredients:

  • 1 1/2 cup butter, melted
  • 2 cup smooth peanut butter
  • 4 1/2 cup powdered sugar
  • 2 cups graham cracker crumbs
  • Bakers Chocolate

Combine all the ingredients (except Bakers Chocolate) in a large bowl until thoroughly mixed then chill for one hour.  Roll into bite size balls and place on a waxed paper lined cookie sheet, chill again another hour. Once chilled, dip into melted Bakers chocolate *can melt in the microwave and thin with Crisco if needed.  You can either make them like buckeyes by dipping them in part ways, or spooning the chocolate over them as they rest on the cookie sheet (the spot they sit on does not get covered this way) or you can just cover them completely in chocolate.
